Oversee and coordinate the day-to-day operation of the restaurant and other dining facilities by supervising and controlling all catering outlets in the hotel and ensuring service provided is to the required standards and within agreed budgetary limits.

RESPONSIBILITIES:

  • Manage and supervise activities of all staff in the Food & Beverage department to ensure staff members work according to the hotel requirements as well as see to the prompt and efficient service of all meals, snacks, and beverages.
  • Maintain Standard Operating Procedures (SOPs) and check on administration and working procedures of all staff to ensure work activities are done accurately and within the set standards.
  • Work closely with the GM to source for operational items including, crockery, linen, food & beverage, etc and negotiate with suppliers and vendors to estimate amounts and costs of required supplies while closely observing all procurement guidelines.
  • Monitor the work of all staff in the department, identify and assess staff training needs and instruct them accordingly to ensure every staff member is up to standard on their daily responsibilities and implement training programmes where possible.
  • Responsible for the management of staff performance in the department.
  • Regularly inspect restaurant, bars and service areas to ensure effectiveness of current cleaning schedules and methods and recommend improvements and changes when necessary.
  • Manage financial responsibilities of the Food & Beverage operations by conducting regular physical checks at cash points and monitoring billing procedures to ensure accurate billing and integrity of all F & B financial activities.
  • Maintain high hygienic standards in restaurants and dining areas and by ensuring staff always keep environs clean of dirt and the hotel and international standards on cleanliness are always adhered to.
  • Conduct regular checks in all dining areas and restaurant to ensure that they are clean and well maintained, that table and cutlery arrangements, including flower arrangements are impeccable and up to standard.
  • Explore and provide hotel with entertainment when required especially during events and special functions whiles ensuring the type and calibre of entertainment provided is of high standards that correspond with hotel’s image.

 

KEY REQUIREMENTS

  • Minimum of a Bachelors degree preferably in hospitality.
  • A degree in Food and Beverage Management will be an advantage.
  • At least five (5) years working experience in a similar role or managing a facility.
  • International experience is essential.
  • Supervisory/management experience of at least 3 years.
  • Strong Customer service.
  • Good problem solving and analytical skills.
